It is Turkey rather than Israel which is looking to change the dynamics of the region and the relationship with the west.
This has to do with internal Turkish politics more than anything having to do with Israel. Turkey is currently ruled by an Islamist party, seeking to take power from the old secular power structure enacted by Attaturk. The military in Turkey, always prone to interfere in politics if it feels the secular nature of the Turkish Republic is undermined, is very popular. However, some of its positions, particularly its close ties with Israel, are not popular. This is a common ground between both the secular pan-European leftist intelligentsia in Turkey and the Islamist masses. Bringing the two together is all that is required to undermine the old powers, and lead Turkey in the trajectory to become an Islamic Republic.

Following weak and apologetic American leadership in the region, Turkey seeks to align itself with Iran and Syria and create a new hegemony in the region. It's bet (and it's a rather safe one) that the US and EU will do nothing, and bite the bullet.
